Best right around a medium roast but works well from light to dark. It stands out for being a very clean and sweet cup. At lighter roast levels it has some crisp acidity, not over the top but noticeable, gives a quick hit lemon and floral that will balance with nutty and chocolate like darker tones. Small hints of caramel and dried fruit will pop out with a little setup. At medium roast levels, you get more of a smooth easy drinking cup, less acidity with accentuated nutty/chocolate tones, a hint of spice in the aftertaste, provides the best balance of light/dark tones. Darker roasts are a little flat and roasty, but on the more neutral side, classic darker roast beans: smooth, rich and on the roasty chocolate side of things with a little nuttiness in the aftertaste.

In the Quechua language of the Peruvian Andes, Minca refers to a special camaraderie between farmers. During non-harvest periods, groups of neighbors travel from farm to farm, working together on what needs to be done. Then they move on to the next farm until everyone’s needs are met. This idea of caring for the whole – this social bond – is known as Minca. The Central Highlands of Chanchamayo are spread across 1500 to 2400masl and are part of the larger region of Junin. The fruit-forward coffees that grow here are filled with notes of cacao nibs, roasted almonds, and fresh fruit like clementine and green apple, with intense acidity, a creamy body, and good balance.

Peru is a top producer of fair trade and certified organic coffee – two key distinctions that help differentiate Peru green coffee from the highly competitive exports coming out of its neighboring countries. In the 1990s, big brands shifted their sourcing direction towards fair trade, ecological, and humane coffees. Peru saw an opportunity and began investing in organic certification. Increased funds from the organic movement helped to revitalize farms and infrastructure. In just ten years, coffee cultivation land grew from 163,000 hectares to 215,000 hectares in 2005. Today, 375,000 hectares are dedicated to coffee production with over 90,000 hectares certified organic. Organic farming on its own, however, can be a costly venture for farmers, starting with a three-year downtime as they transition their land. Organic farming can also leave crops vulnerable to disease and pestilence.
