This wet process lot from the Buture cooperative rounds out the sweeter side of our Ethiopian coffee list, and a nice contrast to some of the lighter body, floral options we currently have. It has a honeyed sweetness we often attribute to coffees from Western Jimma region, along with juicy body, and light hints of stone fruit and tea. The fragrance of the grinds released dark brown sugars, spiced sarsaparilla, and fondant icing. The wet aroma offered hints of molasses cookie with candied ginger, and a fragrant honey note. As brewed coffee, sweetness is prominently featured in City/City+ roasts, creamy white honey, maple sugar, and panela raw sugars mingle with light accents of lemon, dried apricot, and peach. The acidity has tartaric appeal, and is a bit juicy, and brings a refreshing aspect to the light roasts. Full City roasts pull out bittersweetness, dark chocolate, with a juicy grape note, and chocolate-raspberry. It made exceptional espresso too; dark chocolate syrup, canned peach, lavender honey, tangy lemon note.
